I was going to say the Umi Sushi Trains, both at Event Cinemas and Darling Harbour. Makoto at Liverpool Street is also good. Yet for a more laid back ambience and variety, I'd have to say Makoto at Chatswood.
For great quality fresh sushi as well as the absolute best price in Sydney visit Sagunja Sushi in the Mandarin Centre at Chatswood. It is based in the food court and seems totally unassuming. However, the dishes are great, generously proportioned (5 fat pieces of salmon sashimi) and most importantly every dish is priced at $2.50. Like many sushi bars in Sydney it is Korean owned and run, but is a must try!
When I think about great sushi, I think Mizuya on George Street. Not only is the food tasty and fresh, but its a really different experience. The room is set up with booths with a screen displaying the menu. all you have to do is go through, select your order and a waiter will promptly bring out your request. Its easy to see how you could rack up a big bill at the end! Also have a great range of interesting and well priced cocktails and lunch speicals.
