I once visited a hotel in Leura/Katoomba that was one of the most beautiful buildings I've ever seen - inside and out. It was very old, with renaissance-style furnishing and decoration - even the smell was amazing. I wanted to stay there simply because of how beautiful the place was.

The Carrington in Katoomba (the one you have pictured) is the hotel I immediately thought of as well. It's so beautiful with all the period features, and you feel like you've stepped into an old novel. Just stunning.
Brilliant question Kat :) I agree with Kerri, the Carrington Hotel at Katoomba is beautiful. Love the Yindi Day Spa there. If the Hydro Majestic at Medlow Bath was still open, I'd say that place too. Also like the Radisson Blu hotel in the city. Have stayed there in a premier room...heaven.
I haven't been since the refurb but quite fond of Park Hyatt, but that's because of what's outside the window (ditto with the pool at Sheraton on the Park - I like the glass roof looking at Centrepoint Tower). I stayed at Lillianfelds once, that was pretty special. I'm dying to go to Wolgan Valley - I imagine that's pretty spectacular....
