Buying fresh meat, there are a number of things to be looking for. Quality, customer service, and a butcher who knows what they are talking about. Perhaps you prefer only free range or organic meats. Where do you think is the best butchery in Sydney, and what is it that makes them so great?
Penny's Quality Butchers in Mosman have some of the best customer service I've ever come across. They are friendly and knowledgeable, and take great pride in their product. They have a variety of gluten free sausages that taste amazing, and cuts of meat you don't always find elsewhere. They even have books of recipes so if you like a type of meat but don't know what to do with it, you can find out.

Brilliant question Kerri. Always learning heaps from you about gluten free options too. Gluten free sausages in Mosman, yum! Sadly, I barely cook at home, and hence am only familiar with the butchers at David Jones Food Hall in the city. Also love your write up on SFL for Penny's. That meat looks fresh and is so appetising/well presented.
Value Valley Meats @ North Richmond - kills most of the beasts that produce the meat he sells, smokes his own hams @ Xmas, and does the best tasting & huge variety of herbed, spiced & smoked sausages - with different types each week. VERY YUMMY!
